Bacon, onions, and garlic meld seemlessly with creamy Yukon Gold Potatoes for a cozy and comforting side with your dinner.
  • 5lbs of medium Yukon Gold Potatoes
  • 1/2 cup salt
  • 12 slices of bacon, chopped
  • 2 medium red onions, diced
  • 1/2 cup minced garlic
  • 1 cup chicken broth
  • 1/2 cup apple cider vinegar
  • 2 tbsp Dijon mustard
  • 2 tbsp granulated sugar
  • 1 cup fresh chopped parsley
  • 4 tbsp olive oil
  • Salt and pepper to taste
  1. Combine whole potatoes and salt in a pot and cover with water.
  2. Bring to boil and lower to a simmer. Cook until fork tender.
  3. Render bacon in a pan until almost crispy.
  4. Add onions and garlic and sweat until tender.
  5. Add the vinegar, chicken broth and mustard and reduce until almost dry.
  6. Cut the potatoes into quarters or 1 inch cubes depending on size.
  7. Toss the potatoes in the bacon mixture and cool down together so the potatoes absorb all the flavors.
